Chicken Fajitas

1 pound boneless, skinless chicken breasts
1 large green pepper
1 large white onion
1 medium-size ripe tomato
1 package fajita seasoning mix
1/4 cup water
2 tablespoons vegetable oil

Cut chicken breasts, onion, and pepper into strips. Dice tomato into large pieces. Heat one tablespoon vegetable oil in large saute pan. Add chicken and saute until done. Remove from pan. Add remaining oil to pan and saute onion and pepper strips. Add chicken when done. Sprinkle fajita seasoning mix over ingredients, add water, and simmer at how heat for 10 minutes. Add tomatoes and cook for additional five minutes. Spoon over warmed flour tortillas and roll. Serves four.
