Chinese Chicken

Oil for cooking
1 cut-up broiling or frying chicken
Salt
Pepper
Paprika
1 12-ounce jar apricot preserves
2 teaspoons soy sauce
1/4 cup sliced almonds

Rub oil over chicken and sprinkle on seasonings. Bake at 350 degrees for 35-40 minutes or until tender. Combine preserves and soy sauce. Pour over chicken. Sprinkle with almonds. Broil for 1-2 minutes. Serves four.
