Drunken Cornish Hens
4 Cornish Game Hens 4 tablespoons dark rum 1/4 cup lime juice 4 tablespoons honey 4 cloves minced garlic 2 teaspoons salt 1 teaspoon coriander 1 teaspoon pepper
Preheat oven to 350 degrees. Wash the hens and pat dry. Mix together rum, lime juice, honey, garlic, and a teaspoon of salt. Rub mixture over hens and marinate them in the refrigerator for at least 30 minutes. Transfer hens from marinade to a baking dish and pour remaining marinade over hens. Sprinkle outside of hens with remaining salt, pepper, and coriander. Roast hens for 35-40 minutes, or until done. Baste frequently with juices from bottom of baking dish.
Bake for 40 minutes. Serves 4.
