Ginger Glazed Chicken

4 1/2 pounds frying chicken, cut into halves
1/4 cup margarine or vegetable oil
Salt and pepper to taste
3/4 cup orange marmalade
1/4 to 1/2 teaspoon ginger
1/4 cup water
Parsley

Brown chicken in hot margarine/vegetable oil. Place in large, shallow baking dish or roasting pan. Season with salt and pepper. Mix marmalade, ginger, and water, and pour mixture over chicken. Bake uncovered at 375 degrees for 45 minutes, basting occasionally. Garnish with parsley before serving. Serves six. (This one is too much even for me at one sitting!)
