Noodles with Sausage and Peppers
1 pound Italian link sausage 1 tablespoon cooking oil 1 red bell pepper 1 green bell pepper 2 cloves garlic, minced 2/3 cup chicken broth 1/2 cup dry white wine 2 tablespoons tomato paste 1/4 cup chopped parsley 1/4 cup grated Parmesean cheese 1 package (approximately 10 ounces) Asian style noodles
Wash and core peppers. Cut lengthwise into 1/4 inch strips. Cut sausage into chunks. Pour cooking oil to a frying pan and saute sausage over medium heat for five-six minutes. Add peppers and garlic. Saute for an additional two minutes. Add broth, wine, tomato paste, and parsley. Cover and simmer until peppers are almost tender and sauce has slightly thickened. Reduce heat. Cook noodles in a separate container, drain, and place into a serving bowl. Add sausage and peppers mixture and Parmesean cheese to the noodles and toss lightly. Serves three to four, depending on appetite.
