Polynesian Chicken
2 to 2 1/2 pounds chicken, cut up 1 cup sifted flour 1 teaspoon salt 1/4 teaspoon pepper 1 6-ounce can frozen orange juice concentrate, thawed 1 7-ounce package flaked coconut 2 to 3 tablespoons cooking oil
Wash and dry chicken. Coat chicken with flour, salt, and pepper; dip into orange juice; roll in coconut; and place into hot cooking oil. Brown lightly on all sides. Remove from oil and drain. Arrange chicken in a baking dish and cover with foil. Bake at 350 degrees for 30-40 minutes or until tender. Serves four to six.
