Sally's Vegetarian Chili

Mom got this one from my Aunt Sally. It is a great recipe, and the chewiness of the wheat will have you convinced that you're eating meat!

2 and 1/4 cups pinto beans
7 cups boiling water
3 and 1/2 cups cooked tomatoes
1/2 cup tomato paste
1 cup sautéed onions
2 tablespoons oil
1 tablespoon sugar
1/2 tablespoon salt
1/4 teaspoon oregano
1 cup cooked wheat, commercial "vegemeat," or soaked, textured vegetable protein granules"
1/4 teaspoon cumin
1/2 teaspoon sweet basil
1/4 teaspoon garlic powder

Prepare the beans by sorting carefully and washing with cold water. Add beans to boiling water in large kettle. Bring to a full boil. Turn off heat. Let stand for an hour or more. Bring to a boil again and let boil until tender (approximately an hour). Add salt, sugar, onion, tomatoes, cooked wheat, oil, and tomato paste. Let simmer until liquid is evaporated to a thick consistency. Add herbs and garlic powder. Let simmer an additional 20 minutes. Serve with crackers or French bread. Serves 5-6.
