Spinach Salad

The original recipe for this called for dandelion greens, but as they aren't always obtainable, Mom chooses to make it with spinach.

5 or 6 cups of leaves, broken into bite-sized pieces

Dressing
4 strips bacon
bacon grease
1 tablespoon flour
1/3 cup sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup wine vinegar
2/3 cup water
2 hard-boiled eggs, pealed and diced

Fry bacon until crisp. Remove from pan, drain, and crumble. Sprinkle flour over bacon grease remaining in pan and stir well. Add sugar, salt, pepper, vinegar, and water. Bring to a boil, stirring constantly. Pour hot liquid over spinach and stir well. Garnish with diced egg and bacon bits. Serves four.
