Sweet 'n Sour Chicken
1 cup ketchup 3/4 cup apricot preserves 1/4 cup diced onion 1/4 cup diced celery 2 tablespoons cider vinegar 1 teaspoon dry mustard 1/8 teaspoon garlic powder 2-3 pounds broiler or fryer chicken pieces
In a one-quart microwavable container, combine all ingredients except chicken. Microwave on high 3-4 minutes or until sauce is hot and bubbly. Stir and set to one side.
Arrange chicken in a 12x8-inch casserole dish with bony side up and meatiest portions toward the outside of the dish. Cover with waxed paper. Microwave on high for 8 minutes. Drain. Turn and rearrange chicken. Pour sauce over chicken. Cover with waxed paper. Microwave 7-12 minutes or until chicken is fork-tender and meat next to the bone is no longer pink. Serves four.
